brushless motor voltage

Hello,
iam currently planning my new sideway-thruster. So i've googled again for new motors and still asked me why there is a voltage-value for each motor. Mostly for 3S lipo (11,1v) - like the waterproof motors from bluerobotics.
In ROVER3D i use 6 motors for 3S lipos but powering it up with 4S lipos. In the last seven years i'ved used many motors for 3S and powered ESC with 4S lipos ... no problems with the voltage-difference till today. Is it relevant (for ROV)?
So, did anybody ever burned his 3S motor powered by 4S lipo-pack? Any other experience?
